Every Day is A New Day - written 2020



Hi there everyone.

Been away (from here) for a few days as we start to open up our clinic and figure out how to navigate this new world.


But lots going on and I'll just send you this quick update of what we have been doing.

Been making a whole lot of strawberry rhubarb cake. I think I gave the recipe at some point. It's just my regular breakfast or tea cake tweaked a bit to mark summer's sublime bounty- strawberries and rhubarb. I used one cup of rhubarb to two cups of chopped berries and first warmed them on the stove in some olive oil.

  • 4 cups flour

  • 2 tablespoons baking powder

  • 3/4 cup maple syrup (usually one cup but those strawberries are sweet!)

  • 1/2 cup oil

  • 2 cups water

  • teaspoon of salt

  • bake at 350 for one hour if small pan, 35 minutes if shallow


Then we are missing this little guy and can't wait to see him in the most cuddly socially distant way possible.

And then it was just the usual hanging with the boys. They finished school this week, but we have so much left to do before the end of the year. Wait, did I just say they finished? I still have to turn so much in! I don't think I am alone though. It's hard when signs of summer are all around and you just want to enjoy them.

And there is also always a need to do this every chance the boys get.

Will be writing this week and will check in after I get more than just a few words on paper, which is hard when I can barely see through all these mama tears.
